James Galea
AX Caterers by The Palace General Manager

James Galea is a seasoned hospitality professional with a degree in Hotel Management from the Institute of Tourism Studies in Malta. He began his career with a placement at the Hilton Hotel in Leicester, UK, and went on to gain experience at several establishments, including a four-star resort and a leading casino in Malta.

In 2011, James joined AX Hotels as Food and Beverage Manager for AX The Palace and AX The Victoria Hotel. His leadership and dedication led to successive promotions — first to Operations Manager, and later to Hotel Manager of both hotels. Today, he also serves as General Manager of AX Caterers by The Palace, bringing his wealth of expertise and commitment to excellence across the group’s hospitality and event operations.

Zsolt Kopasz
Events Manager

Zsolt Kopasz is the dedicated Events Manager at AX Caterers by The Palace, bringing over a decade of experience in the food and beverage industry and event coordination.

Known for his passion for creating memorable experiences, Zsolt thrives on working closely with clients to bring their visions to life. His attention to detail and commitment to delivering personalised, high-quality events ensure that every occasion is as unique and seamless as possible.

Outside of work, Zsolt enjoys playing football as part of his commitment to a balanced and healthy lifestyle.

Victoria Butterworth
Assistant Events Manager

Victoria Butterworth is the Assistant Events Manager for Sliema and Valletta, bringing extensive industry knowledge and a strong passion for hospitality. Holding a Diploma in Travel and Tourism from the UK, she has honed her skills as a restaurant manager across several respected London venues. Known for her meticulous attention to detail, Victoria has a particular affinity for the wedding market, where her creativity and commitment shine through in every event she helps organise.

Outside of her professional role, Victoria enjoys cooking and traveling — pursuits that reflect her love of both culinary artistry and cultural exploration.

Mark Zammit
Operations Manager

Mark Zammit hones years of hands-on experience across various hotels and brought his expertise to AX The Palace during its pre-opening phase in 2007, where he began as an F&B Supervisor. In 2016, he advanced to an F&B Executive at AX The Palace and was later appointed F&B Service Manager for both AX The Palace and AX The Victoria Hotel. In June 2025 Mark was promoted to Operations Manager for the Sliema Hotels and AX Caterers by The Palace, where he continues to elevate service standards across the board.

Mark’s greatest passion lies in team development. He takes pride in mentoring his staff, fostering a culture of excellence, and empowering them to consistently deliver exceptional guest experiences.

Joseph Xuereb
Executive Chef

Chef Joseph Xuereb discovered his culinary passion through a rich family legacy. His natural talent led him to excel at the Institute of Tourism Studies in Malta and earn an internship in Jersey, Channel Islands, further enhanced by advanced training alongside renowned chefs in London.

Driven by continuous growth, Chef Joseph rose through the ranks to become an Executive Chef. In 2007, he embraced a new challenge at AX The Palace, leading the launch of an innovative Asian restaurant concept. He now oversees the culinary operations at both AX Sliema hotels, where he and his dedicated team have earned accolades in culinary competitions and keeps delivering outstanding results at high-profile events.

Fabian Sicali Grech
F&B Service Manager

Fabian has been an integral part of the AX Sliema Hotels team for over five years, serving with dedication as Assistant Food & Beverage Manager. His commitment to excellence, collaborative spirit, and focus on guest satisfaction have been key drivers in his continued growth within the company.

In June 2025, Fabian became AX Sliema Hotels’ Food & Beverage Service Manager. Throughout his journey, he has worked alongside experienced mentors and contributed to numerous initiatives aimed at enhancing service quality and the overall guest experience. Fabian remains focused on supporting his team and contributing to AX’s ongoing success.

Liam Falzon
Events Executive

Liam Falzon began his journey in Food and Beverage and from there, progressed to the role of Events Executive, where he oversees the planning and seamless execution of a wide range of events while liaising closely with both current and prospective clients. Known for his perfectionist approach, Liam’s exceptional attention to detail ensures that every event not only runs smoothly but exceeds expectations.

Liam holds a Bachelor’s Degree in International Hospitality Management and is currently furthering his academic journey by pursuing a Master’s Degree that strongly complement his role and passion for the industry. In his free time, Liam unwinds through exercise and physical activity.
